Ever heard of massaged kale? This is a simple hack that transforms stiff kale leaves into its softer counterpart. For one minute, massage kale leaves between your fingers. This technique of rubbing the leaves in lemon juice helps to soften the leaves and makes it far easier to eat … and enjoy. Now adorn with an abundance of winter produce, from sweet persimmons to ruby red beets, crisp apples and juicy pomegranates. —MR
SERVES 1
TURMERIC DRESSING
½ tsp ground turmeric
1 tbsp (18 g) tahini
2 tsp (10 ml) maple syrup
1 small clove garlic, thinly chopped
1½ tbsp (27 ml) apple cider vinegar or lemon juice
2 tbsp (30 ml) water
SIMPLE WINTER SALAD
3 large handfuls kale
½ large red beet, cooked and cubed
½ persimmon, thinly sliced
⅓ red apple, thinly sliced
Small handful of raisins
Small handful of pecans or any nut
Handful of pomegranate seeds
FOR THE TURMERIC DRESSING
Make the dressing by simply whisking everything together in a small bowl.
FOR THE SALAD
Start by tearing the kale leaves into bite-size pieces, disregarding the stems. Then wash the kale leaves and pat dry. Before you massage the kale, you’ll want to pour your turmeric dressing on top of the leaves. Then use your hands to massage the dressing into the kale. The acid from the dressing will help break down the leaves. Massage for 1 to 2 minutes. The longer you massage, the softer the kale will become.
Now add all of the remaining salad ingredients to the kale salad and mix well.
Serve it on plates and enjoy!
