Winter CITRUS AND ARUGULA SALAD WITH CRANBERRY ORANGE DRESSING

Is there anything better than winter citrus? The sweetness of an orange, the tartness of a grapefruit—and how about the gorgeous color of cranberries? We’ve picked our favorite winter fruits and mixed them into one amazing salad. —LM + AM

SERVES 6

6 cups (240 g) baby arugula

1 large grapefruit, peeled and sliced

2 blood oranges, peeled and sliced

2 cups (174 g) shredded fennel

½ cup (85 g) coarsely chopped raw almonds

¼ cup (60 ml) cranberry juice

¼ cup (60 ml) blood orange juice

¼ cup (60 ml) champagne vinegar

Pinch of ground cloves

¼ tsp olive oil

Fine sea salt, to taste

In a large bowl, on top of the arugula, layer the grapefruit, blood orange, fennel and almonds.

In a small bowl, whisk the cranberry juice, blood orange juice, vinegar, cloves, olive oil and sea salt until well blended.

Pour the dressing on the salad and toss it to coat.
