Almond Bites WITH MACA, VANILLA AND FLAX

Unusual ingredients and flavors are used here … but it’s fun to try new stuff, right? I like to switch things up every now and then. —EvE

MAKES 20 SMALL BITES

1 cup (85 g) almond pulp (left over from making almond milk)

1 cup (120 g) walnuts

½ tsp vanilla powder

2 tbsp (14 g) maca powder

1 tbsp (7 g) ground flaxseed

1 tbsp (7 g) camu camu powder

¼ cup (60 ml) maple syrup

3 tbsp (45 ml) melted coconut oil

Throw all the ingredients in a food processor and process until you have a moist, slightly crumbly dough. When you press some together between your fingers, it should hold its shape. If it’s too crumbly, add 1 tablespoon (14 g) more of coconut oil or fresh lemon juice (15 ml). If it’s too moist, add 1 to 2 tablespoons (7 to 14 g) more of ground flax or other flour or powder.

Roll it into balls, or press it into cookies and coat with whatever you like. I used black sesame seeds; other options would be chia seeds, shredded coconut, ground cinnamon or cacao powder. Another excellent idea: cover them in melted dark chocolate. Yes. Do that.
