It’s pretty awesome to sip a mango lassi, a traditional Indian yogurt drink, to cool down. This frozen pop recipe makes it even cooler, and you can freeze it in your favorite icy pop molds. —KH
MAKES 6 TO 8 FROZEN POPS
1½ cups (225 g) chopped mango (about 2 small mangos)
1 cup (245 g) plain vegan soy or coconut yogurt
2 tbsp (30 ml) agave nectar (or sweetener of your choice, to taste)
1 tsp rosewater
¼ tsp ground cardamom
Add all of the ingredients to your blender and purée until smooth.
Fill up the freezer pop molds and freeze for at least 8 hours. Run cold water over the molds to release the frozen treats.
