No-Bake ALMOND BUTTER COOKIES

A no-bake cookie recipe doesn’t come much easier than this. Put simply, this is a phenomenal tasting almond butter cookie. And if almond butter isn’t your thing, set your inhibitions free and scoop in any nut butter combination that pleases your appetite. —MR

MAKES 10 COOKIES

¾ cup (72 g) almond flour or oat flour

¼ cup (63 g) unsalted almond butter

¼ cup (19 g) unsweetened coconut flakes, plus extra for topping

1 tsp ground cinnamon

2–3 tbsp (30–45 ml) maple syrup

1 tbsp (15 ml) almond milk or water

Sea salt, for topping

Simply place all of the ingredients (except the salt) in a food processor and mix them until combined and creamy, about 1 minute. Now let the dough set in the refrigerator for 30 minutes to harden.

Then scoop out a teaspoon amount of the dough and roll it into a ball with your hands. Use the back end of a fork to press the cookie ball down into a flat circle. Sprinkle it with sea salt and coconut flakes and enjoy! Store these in the refrigerator to keep them fresh and delicious.
