MAKES 12 CLUSTERS

½ cup (85 g) roughly chopped raw unsalted almonds

½ cup (55 g) roughly chopped raw unsalted walnuts

½ cup (55 g) roughly chopped raw unsalted pecans

4 tbsp (60 ml) brown rice syrup or maple syrup

Sprinkle of sea salt, plus more for topping

Preheat the oven to 350°F (177°C).

Place the nuts in a mixing bowl along with the brown rice syrup and a sprinkle of sea salt. Once all the nuts have been mixed and well coated, place a small amount of the mixture into lined cupcake-baking trays. Sprinkle each cluster with a little extra sea salt and bake them for 8 minutes, until the clusters are roasted and form together. Once it’s done, let the clusters cool in the fridge for 10 minutes. Don’t let it cool in the freezer, as the syrup will stick to the bottom of the lined baking tray. Remove them from the fridge and enjoy!
