Simple OVERNIGHT OATS/BIRCHER MUESLI

When pressed for time, bircher muesli is the dream breakfast companion. Leave the oats to soak in nut milk, and come morning, the oats will have plumped, softened and absorbed the delicious milk.

Keep in mind that oats and milk alone don’t offer an array of flavors. Add your favorite berries, dried fruit and nuts for a bircher muesli that is equally packed with nutrition and flavor. —MR

SERVES 1

1 cup (235 ml) cashew milk or any nut milk

1 tbsp (15 ml) maple syrup

¾ cup (92 g) raspberries or any berry

½ ripe banana

¾ cup (60 g) GF rolled oats or instant oats

Small handful of raw cacao nibs (optional)

Fill a bowl with the cashew milk and maple syrup, add the raspberries and banana and mash with the back end of a fork, releasing all their juices into the same bowl. Then add the oats and raw cacao nibs (if using); mix well. Place a cover over the muesli and store in the refrigerator overnight or for at least 3 hours.

Enjoy this hearty breakfast with fresh fruit or nuts.
