SERVES 4
1½ cups (360 ml) water
1 cup (180 g) uncooked quinoa, rinsed
1 cup (240 ml) almond milk
1 tbsp (15 ml) pure maple syrup
1 tsp ground cinnamon
Pinch of salt
1 cup (170 g) almonds, soaked in water to cover, drained
2 tbsp (20 g) hulled hemp seeds
1½ cups (300 g) fresh pitted and diced cherries
1 cup (150 g) blueberries
½ cup (40 g) unsweetened coconut flakes
In a medium saucepan, bring the water and quinoa to a boil. Once boiling, cover the pan and reduce the heat to a simmer. Cook the quinoa for 15 minutes, or until the water is completely absorbed.
Remove the pan from the heat and allow it to sit, covered, for 10 minutes.
Take off the lid and fluff the quinoa.
Place the quinoa in a medium bowl to cool. In a separate bowl, mix the almond milk, maple syrup, cinnamon and salt until combined. Pour the mixture into the bowl of quinoa. Fold in the almonds, hemp seeds, cherries, blueberries and coconut.
