1 scoop (7 g) vegan vanilla protein powder
1 cup (150 g) fresh strawberries
½ cup (55 g) raw cashews
3 pitted Medjool dates
1½ cups (355 ml) nondairy milk (we like coconut!)
1 cup (235 g) ice
Granola, for garnish (optional)
Blend all the ingredients except the granola in a high-speed blender until smooth. Top with a bit of granola (it’s like the “crust” of the cheesecake!) and serve in two small glasses—or one big one.
