SERVES 1 TO 2
2 cups (300 g) fresh strawberries
1 large frozen banana
3 pitted Medjool dates
1½ cups (355 ml) nondairy milk
1 cup (235 g) ice
1 scoop (about 7 g) vegan protein powder (optional)
Preheat the oven to 450°F (232°C). Then spread the strawberries onto a lined baking sheet and roast in the oven for 15 to 20 minutes, until the berries are caramelized and smelling sticky sweet. Remove from the oven and let cool.
Once cooled, place the strawberries, frozen banana, dates, milk, ice and protein powder into a high-speed blender and blend until smooth. Serve in two small glasses or one large one.
