Refreshing WATERMELON DRINK

There are a million and one recipes for watermelon juice on the Internet, but this is the one I turn to time and time again. It only asks of a few humble ingredients—watermelon, cucumber, mint and fennel—and from there you have a refreshing midday drink or the perfect accompaniment to a Sunday brunch. —MR

SERVES 2

½ small watermelon, rind and seeds removed

1 small cucumber, peeled

1 handful fresh mint

¼ fennel head, cored

Place all of the ingredients into a juicer and juice slowly until all the liquid is pulled through. Add the juice to a pitcher with ice and enjoy! Store the juice in an airtight container and keep it in the fridge for up to 3 days.
