I’m always on the hunt for interesting, new-to-me spice mixes. This one doesn’t disappoint: tsire is a warm peanut-based North African blend. It’s a delight in Tsire Tempeh Bites and Tsire-Spiced Hummus. —CS
MAKES 1 CUP (105 G)
¾ cup (90 g) unsalted roasted peanuts
1–2 tsp (2–4 g) chipotle powder or other chile powder, to taste
½ tsp ground ginger
½ tsp ground cinnamon
½ tsp ground cloves
½ tsp freshly grated nutmeg
¼ tsp fine sea salt
Place all of the ingredients in a food processor. Pulse until the peanuts are ground somewhat finely. Do not overprocess; you don’t want the peanuts to turn into butter. Store in an airtight container at room temperature or in the refrigerator for up to 2 weeks.
