There’s no need to buy jarred sauce that’s full of ingredients you don’t want to eat when you can make this fresh and easy sauce. We call it a four-ingredient sauce because you only need an onion, garlic, tomatoes and Italian seasoning to make it. We added a bit of olive oil, sugar and salt and pepper, but since they’re kitchen staples, we really don’t count them in the ingredients list. Make this the next time you bake your own pizza. MAKES ABOUT 3 CUPS (746 G)
1 tsp extra-virgin olive oil or 2 tbsp (30 ml) water for oil-free
1 small red onion, finely chopped
2 cloves garlic, minced
24 oz (680 g) strained tomatoes (I use Pomi brand)
1 tbsp (2 g) dried Italian seasoning
½ tsp sugar
Fine sea salt and black pepper, to taste
In a medium saucepan, heat the oil or water over medium heat. Add the onions and stir to distribute evenly in the pan. Cook for about 15 minutes, stirring frequently, until the onions begin to caramelize. Add the garlic and stir. Cook for 2 minutes. Add the strained tomatoes, Italian seasoning, sugar, salt and pepper, and stir to combine. Bring it to a boil. Reduce the heat to a low simmer and cook for 15 minutes. Stir frequently so the sauce doesn’t scorch.
Store in an airtight container in the refrigerator for up to a week or freeze for up to a month.
