Healthy SINGLE-SERVING OIL-FREE PESTO

Did we mention we love pesto? Here’s our second take on this famous dip/sauce. While typical pesto is filled to the brim with oil, ours has a lighter taste. Take out that oil and insert an avocado. You retain the creamy texture of original pesto, but cut the caloric and fat intake! —LM + AM

MAKES 1 SERVING

¼ avocado

1 clove garlic, peeled

1 tbsp (5 g) nutritional yeast

1 cup (60 g) chopped basil

3 tbsp (45 ml) water

Salt and pepper, to taste

Put the avocado, garlic, nutritional yeast and basil in a food processor or blender and blend. Add the water 1 tablespoon (15 ml) at a time until you get the desired consistency. Add salt and pepper if you like.
