Raspberry CHIA JAM

Gone are the days when canning was the sole expression of a handcrafted jam. This is a modern-day jam recipe that comes together in minutes. Just three ingredients are your key to homemade jam euphoria: Fruit, chia seeds and maple create a delightful jam every single time. Chia seeds create the gelatinous feel of jam. This ingredient is crucial to having thick jam. —MR

SERVES 4 TO 6

1 cup (150 g) fresh strawberries, or frozen and thawed

2 cups (300 g) fresh raspberries, or frozen and thawed

3 tbsp (45 ml) maple syrup

2½ tbsp (25 g) chia seeds

Start by cutting the fresh strawberries in half (green tops removed). Add the strawberries, raspberries and maple syrup to a small saucepan and simmer for 10 minutes over medium-low heat (keep the lid ajar). Mash the fruit as it simmers, but leave a few pieces whole for texture in the jam. Allow the mixture to thicken and reduce down. After 10 minutes, add the chia seeds, mix well and simmer for another 5 to 10 minutes.

Once the jam has thickened to your liking, remove and seal in an airtight container. Enjoy this jam on a piece of toast with almond butter for a very delicious and quick snack!
