2 tablespoons whey

2 bunches of mint (about 1½ ounces)

For the whey, line a strainer with 4 layers of muslin and set over a large bowl. Add the yogurt, cover, and leave for 4 to 6 hours or chill overnight. Liquid whey will drain into the bowl.
