Grilled Lamb Chops with Spice Rub

Grilling chops that have been seasoned with a rub is the easiest way to guarantee lots of flavor.

PREP: 5 minutes GRILL: about 10 minutes

MAKES: 4 main-dish servings

1 recipe choice of dry spice rub Sweet Ginger Rub

4 lamb shoulder chops, 34 inch thick (each 8 ounces)

1. Prepare outdoor grill for direct grilling over medium heat.

2. In small bowl, combine rub ingredients; use to rub on lamb chops.

3. Place chops on hot grill rack and cook about 5 minutes per side for medium-rare or until desired doneness.
