CHAPTER 7

Pork

Pork in all its forms is extremely versatile when it comes to the grill and the grill pan, whether it be a roast, tenderloin, chops, ribs, or kabobs. A single pork tenderloin will feed a family of four nicely, cooks up in just 20 minutes, and takes to a wide range of flavors. Consider Lime Pork Tenderloin with Grilled Plums, Bacon-Wrapped Pork Tenderloins, and Hoisin-Honey-Glazed Pork Tenderloin with Grilled Pineapple. Pork chops grill up in half the time— serve with one of our grilled accompaniments such as corn salad, brown sugar–glazed peaches, or tomato salad.

The big daddy of the pork grill, though, are ribs, and we’ve got some delicious recipes for you: Kansas City Ribs, Baby Back Ribs with Sweet and Hot Rub, and Barbecued Pork Spareribs with your choice of three sauces— Balsamic-Rosemary, Orange-Dijon, or Asian Barbecue Sauce. The big, meaty flavors of sausage and ham are enhanced by the fire-roasting of the grill. Try Spiced Kielbasa and Summer Fruit Kabobs, the classic Sausage and Pepper Grill, or enjoy the interplay of hot and sweet in Chile-Rubbed Ham with Peach-Cilantro Salsa.
