Baby Back Ribs Supreme
Only fifteen minutes of grilling time! The trick? Steam the seasoned ribs for an hour in the oven up to two days before barbecuing. With both the ribs and the BBQ sauce prepared in advance, this could easily become a part of your summer weeknight repertoire.
PREP: 1 hour 15 minutes GRILL: 15 minutes
MAKES: 8 main-dish servings
4 teaspoons grated, peeled fresh ginger
2 teaspoons freshly grated lemon peel
¾ teaspoon salt
2 garlic cloves, crushed with garlic press
4 racks pork baby back ribs (about 1 pound each; see Tip)
2 cups boiling water
2 cups Secret-Recipe BBQ Sauce
1. Preheat oven to 350°F. In cup, mix ginger, lemon peel, salt, and garlic until combined. Rub ginger mixture on ribs.
2. Place ribs in large roasting pan (15 ½" by 11 ½"), overlapping slightly. Pour boiling water into roasting pan. Cover pan tightly with foil and place in oven. Steam ribs 1 hour.
3. Meanwhile, prepare Secret-Recipe BBQ Sauce.
4. Carefully remove foil from roasting pan (escaping steam is very hot). Remove ribs from pan; discard water. Ribs may be grilled immediately or refrigerated, covered, up to 2 days before grilling.
5. Prepare outdoor grill for direct grilling over medium heat.
6. Place ribs, meat side up, on hot grill rack; grill 5 minutes, turning over once. Turn ribs again; brush with BBQ sauce and grill 5 minutes. Repeat turning and brushing once more. Cut racks into 2-rib portions; serve with remaining BBQ sauce.

TIP: When buying baby backs, look for ribs that are meaty, with a minimum of visible fat.
