Gingered Beef and Chicken Saté
No doubt about it, saté makes for a fun outdoor party appetizer. Skewers are served up hot from the grill, with peanut sauce for dipping and our Cucumber Relish to cool the fire.
PREP: 45 minutes plus marinating
GRILL: 3 to 7 minutes per batch
MAKES: 12 appetizer servings
1 pound skinless, boneless chicken breast halves
1 boneless beef top sirloin steak, 1 inch thick
(about 1¼ pounds; see Tip)
2 limes
¼ cup plus 1 tablespoon soy sauce
1 tablespoon grated, peeled fresh ginger
2 teaspoons sugar
2 garlic cloves, crushed with garlic press
¼ cup creamy peanut butter
¼ cup very hot tap water
4 teaspoons seasoned rice vinegar
1 tablespoon light (mild) molasses
teaspoon crushed red pepper
1 recipe Cucumber Relish
24 (12-inch) metal skewers
1. Cut chicken breasts lengthwise into -inch-wide strips; place in bowl. Holding knife almost parallel to work surface, slice steak crosswise into thin strips; place in separate bowl.
2. From limes, grate 2 teaspoons peel and squeeze 2 tablespoons juice. In small bowl, with fork, mix lime peel and juice, ¼ cup soy sauce, ginger, sugar, and garlic. Stir half of soy-sauce mixture into chicken and remaining half into beef. Cover both bowls and let stand 30 minutes in the refrigerator.
3. Prepare outdoor grill for direct grilling over medium heat, or lightly spray a ridged grill pan with nonstick cooking spray, then heat on medium until hot.
4. Meanwhile, in medium bowl, with wire whisk, mix peanut butter, hot water, vinegar, remaining 1 tablespoon soy sauce, molasses, and crushed red pepper until smooth.
5. Prepare Cucumber Relish.
6. Separately thread chicken strips and beef strips, accordion-style, onto metal skewers.
7. Place 12 skewers on hot grill rack and grill, turning once, until just cooked through, 3 to 7 minutes. Repeat with remaining skewers. Serve with peanut sauce and relish.

TIP: For variety, try strips of boneless pork loin instead of beef. Grill pork satés, turning once, until cooked through, about 8 minutes.
