Grilled Polenta with Fontina
Precooked polenta comes in a log shape and may be found in the dairy section of your supermarket.
PREP: 10 minutes GRILL: about 10 minutes
MAKES: 6 side-dish servings
2 ripe medium tomatoes (6 to 8 ounces each),
chopped
2 tablespoons chopped fresh parsley
¼ teaspoon salt
teaspoon coarsely ground black pepper
1 package (24 ounces) precooked polenta,
cut into 12 slices
1 tablespoon olive oil
2 ounces Fontina cheese, shredded (½ cup;
see Tip)
1. Prepare outdoor grill for direct grilling over medium heat.
2. In small bowl, combine tomatoes, parsley, salt, and pepper; set aside.
3. Brush both sides of polenta slices with oil. Place slices on hot grill rack and grill until undersides are golden, about 5 minutes. Turn slices and top with cheese. Grill polenta just until cheese melts, about 5 minutes longer. Transfer to platter and top with tomato mixture.

TIP: Can’t find Fontina? Substitute Monterey Jack or Muenster cheese. To save time, top the grilled polenta with store-bought pesto or salsa instead of our fresh tomato topping.
