Patty Melts
Here’s a new twist—burger and Swiss on rye!
PREP: 10 minutes GRILL: 8 to 10 minutes
MAKES: 4 burgers
1½ pounds ground beef chuck
½ teaspoon salt
½ teaspoon ground black pepper
5 (8-inch) metal skewers
1 large onion (10 to 12 ounces), cut crosswise into 5 thick slices
4 slices (1 ounce each) Swiss cheese
2 tablespoons stone-ground mustard
4 oval slices rye bread
1. Prepare outdoor grill for covered direct grilling over medium heat, or lightly spray a ridged grill pan with nonstick cooking spray, then heat on medium until hot.
2. Meanwhile, shape ground beef into four ½-inch-thick oval patties, handling beef as gently as possible. Sprinkle salt and pepper on both sides of patties. For easier handling, insert skewers horizontally through onion slices.
3. Place patties and onion slices on hot grill rack or pan. Cover grill and cook 8 to 10 minutes for medium and until onion is tender and browned, turning patties and onion slices over once. During the last 2 minutes of cooking, place cheese slices on burgers to melt.
4. To serve, spread mustard on 1 side of each bread slice. Top each slice with a patty and some grilled onion, separating onion slices into rings.
