As much as we love making our own pizza dough from scratch (here, here), sometimes you need a quick store-bought alternative. I came up with these easy pita pizzas to give traditional pizza night a Greek twist, complete with warmed pitas as the crust, hummus instead of tomato sauce, and a whole bunch of fresh toppings like tomatoes, Kalamata olives, red onion, and of course, feta cheese. Then I top ’em off with freshly stirred-up tzatziki sauce, the yogurt-y, herb-y condiment you’ll find served with most Greek dishes. You could serve these for dinner or put them out as a starter for parties—either way, there won’t be leftovers!
1 cup plain Greek yogurt
½ cup diced seedless English cucumber
1 tablespoon fresh lemon juice
1 tablespoon finely chopped fresh dill
1 garlic clove, minced
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
4 (6-inch) white or whole-wheat pitas
1 cup Creamy Hummus (here) or store-bought hummus
2 cups chopped romaine lettuce
1 cup halved grape tomatoes
1 cup chopped English cucumber
½ cup pitted Kalamata olives
½ small red onion, thinly sliced
⅓ cup crumbled feta cheese
Chopped fresh dill and parsley, for garnish (optional)
1 Make the tzatziki: In a small bowl, combine the yogurt, cucumber, lemon juice, dill, garlic, salt, and pepper. Stir and set aside.
2 Assemble the pita pizzas: Preheat the oven to 400°F. Place the pita breads on a large baking sheet and bake until warmed through, 5 to 7 minutes.
3 Spread each pita with ¼ cup hummus. Top with the romaine, tomatoes, cucumber, olives, onion, and feta. Drizzle the tzatziki sauce over the tops and garnish with fresh dill and parsley, if desired. Cut into triangles and serve immediately.
