Shredded Chicken Quesadilla (All Phases)

Eating quesadillas is now a reality in Phases 1 and 2! This quick-and-easy Latin-style sandwich makes a great grab-and-go lunch, snack, or even breakfast. Get creative with different fillings to please all the tastes and food preferences in your family.

• 2 Basic Socca Wraps (here)

• 3 tablespoons shredded cheddar cheese

• ¾ cup Shredded Chicken (here)

• 2 tablespoons Fresh Salsa (here)

• ⅓ cup Refried Beans (here)

• 1 tablespoon sour cream or Dairy-Free Sour Cream (here)

• ¼ avocado, sliced

Heat a cast-iron skillet or griddle over medium-high heat. Warm one Socca Wrap on one side for about 15 seconds, then flip. Reduce the heat to medium. Sprinkle half the cheese evenly over the warm wrap. Layer on the chicken, salsa, and remaining cheese, evenly distributing them over the wrap.

Spread the beans evenly over one side of the second Socca Wrap. Place it bean-side down on top of the fillings in the first wrap. Flip the entire quesadilla using a large spatula and cook on the other side until lightly browned, 1 to 2 minutes.

Carefully remove from skillet and place on a large cutting board to cool, 2 to 3 minutes.

Cut into 6 wedges, and garnish with sour cream and avocado before serving.

Variations

Vegetarian version: Substitute ⅔ cup Crumbled Tempeh (here) or other vegetarian protein for the chicken, substitute 3 tablespoons plain whole-milk Greek yogurt for the sour cream, and omit the avocado to accommodate the higher fat and lower protein content of the tempeh.
