These “fauxtatoes” add whole grains to your diet in an impressive impersonation of the conventional potato-based dish. Top with Sautéed Mushrooms (here) or a drizzle of olive oil and serve alongside your favorite proteins.
• 2 cups water
• ½ cup uncooked millet, rinsed and drained
• 1 medium head cauliflower, coarsely chopped
• 1 large clove garlic, minced
• 2 tablespoons extra-virgin olive oil
• ½ teaspoon salt
• ¼ teaspoon ground black pepper
Bring the water to a boil in a medium pot over medium-high heat. Stir in the millet, cauliflower, garlic, 1 tablespoon of the olive oil, the salt, and the pepper. Return to a boil. Reduce the heat to low, cover, and cook for 30 minutes, or until the water has been absorbed.
Puree directly in the pot with an immersion blender until smooth and creamy.
Serve warm, drizzled with the remaining 1 tablespoon olive oil as a garnish.
