One of our most versatile recipes, this simple dish can be served as a topping on steak, pork chops, or any grilled meats. Enhance whole grains like Millet Mashed Fauxtatoes (here), brown rice, or Cooked Quinoa (here). Use them to top pizzas or as filling in crepes or wraps.
• 2 tablespoons extra-virgin olive oil
• 1 large clove garlic
• 16 ounces baby bella/cremini mushrooms, sliced
• ¼ teaspoon salt
Heat the olive oil in a large skillet over medium heat. Add the garlic and cook, stirring, to infuse the oil, about 1 minute.
Add the mushrooms and salt. Cook, stirring regularly, until the mushrooms are soft and all the liquid has been absorbed, 10 to 15 minutes.
These are delicious made ahead and will keep in an airtight container in the refrigerator for up to 1 week.
