Goat’s Cheese with Balsamic Onions and Rocket

We use goat’s cheese a lot in Small World. This combination of contrasting flavours–the sharpness of the onion, the tangy sweetness of the balsamic vinegar and the mild creaminess of the soft goat’s cheese–creates a taste sensation. Great on a crusty ciabatta or crunchy brown bread.

Ingredients

150 g (5 ½ oz) soft goat’s cheese, such as a French chèvre

150 g (5 ½ oz) Balsamic Onions (see recipe), chopped in large pieces

a handful young rocket (arugula) leaves

black pepper

Method

Cut the bread in half, and slather the goat’s cheese evenly over both slices. Layer the balsamic onion pieces on top of one side of the bread. Give it all a good grind of pepper, top with rocket leaves, and put both bread halves together.
