It’s important to buy a kombucha that will work well with the other flavors in this drink. If you can’t find a plain citrus Kombucha, opt for one labeled “original.”
3 tablespoons Simple Honey Syrup (page 272)
2 tablespoons fresh lime juice
6 tablespoons (3 ounces) blanco tequila
Ice
1 cup citrus kombucha (such as GT’s Enlightened Organic Raw Citrus Kombucha)
1 Combine the honey syrup, lime juice, and tequila in a cocktail shaker, and add enough ice to fill the shaker. Cover with the lid and shake vigorously until chilled, about 30 seconds.
2 Fill two glasses with ice and strain the tequila mixture evenly into the glasses. Top evenly with the kombucha, and stir.

Kombucha is made by fermenting tea, usually black tea, to create a fizzy beverage that’s tart and slightly sweet. Variations may be flavored with fruit, herbs, spices, or a combination. Drinking kombucha has become a mainstream craze that touts some pretty good health benefits. The fermentation process used to make it means the beverage has live cultures—which you may hear more commonly referred to as probiotics—that promote good gut health. Two tips for when you try:
• Don’t be tempted to shake the bottle. Similar to soda, the fizzy drink will expand and overflow once opened if shaken.
• Choose one with 4g or less of sugar per 1-cup serving (8 fluid ounces). All kombuchas require a little sugar to initiate fermentation, but some have sugar added post-fermentation to sweeten them.
