French Onion Soup

SERVES 4 TO 6

    1 tablespoon grapeseed oil

    3 large yellow or white onions, quartered and thinly sliced

    6 cups vegetable broth, or 4 cups water plus 2 cups chicken bone broth

    2 cups greens (kale, chard, or spinach), thinly sliced

    1 bay leaf

    ½ cup fresh thyme, chopped

    Sea salt to taste

    1 teaspoon fresh ground pepper

    ½ cup grated vegan cashew nut cheese or nutritional yeast flakes

    ¼ cup green onions, chopped (for garnish)

Heat the grapeseed oil in a large pot and cook the onions until they are soft and browned.

Add the broth, greens, and bay leaf. Season with thyme, salt, and pepper. Simmer over a low flame for 1 hour.

Garnish with cashew nut cheese or nutritional yeast flakes and green onions.
