SERVES 2
2 cups dark greens (whichever ones you desire—go wild!)
½ cup purslane leaves, chopped
¼ cup parsley leaves, chopped
1 bunch scallions, chopped
1 medium carrot, grated
1 red bell pepper, chopped
½ jicama, grated
½ cup mushrooms of your choice, chopped
¼ cup chickpeas (if canned, use BPA-free)
1 tablespoon oil of your choice (avocado, olive, macadamia, etc.)
1 tablespoon apple cider vinegar
2 tablespoons walnuts, crushed
Mix together all ingredients except the oil, vinegar, and walnuts in a large bowl. Toss with the oil and vinegar. Top with the walnuts and serve.
