SERVES 2 ADULTS OR UP TO 4 CHILDREN
¾ cup ground almonds or walnuts
½ cup ground flax
¼ cup sesame seeds
1 large pastured egg
1 8-ounce boneless, skinless chicken breast, cut into strips
In a small bowl, combine the ground nuts, flax, and seeds. In a separate bowl, beat the egg. Place the chicken breast in the egg to marinate for 5 minutes, flipping the pieces to coat as needed.
Preheat the oven to 350°F. Cover a large baking tray with parchment paper.
Once the chicken is coated well in egg, carefully press the chicken tenders into the nut mixture, making sure they are well coated. Place the coated chicken on the baking tray. Do not crowd the tray.
Bake for about 20 minutes. Remove the chicken from the oven. Flip the chicken pieces and return them to the oven for another 15 to 20 minutes, until chicken is fully cooked and golden. Serve with a sauce or on top of a salad.
