On the Grill
½ pound sweet or hot Italian-style turkey sausages
2 red bell peppers, cut into thick strips
1 large portobello mushroom, stemmed
1 large red onion, sliced
4 (8-inch) reduced-fat whole wheat tortillas
½ teaspoon dried oregano
1 Spray grill rack with nonstick spray. Preheat grill to medium or prepare medium fire.
2 Place sausages, bell peppers, mushroom, and onion on grill rack and grill, turning, until sausages are cooked through, about 15 minutes, and vegetables are softened, about 8 minutes. Transfer sausages and vegetables to cutting board. Cut sausages into ½-inch slices and mushroom into ¼-inch slices. Coarsely chop onion.
3 Place tortillas on grill rack and grill just until warmed, about 30 seconds on each side. Pile one-fourth of sausages and vegetables on each tortilla; sprinkle evenly with oregano. Fold tortillas in half.
