CESTINI

Cestini, like strichetti (see page 108) and caramelle (see page 212), are a relatively modern shape. All over northeastern Italy you find these filled pasta parcels served with sauces that mirror or complement their fillings. The shaping technique, which produces roughly pyramid-shaped pasta, is unique to the Spisni family; I adapt it here and pair it with the fillings and sauces I love.
