Peas may be an unusual addition to a smoothie but the sweet and succulent vegetable is surprisingly good, especially when combined with fresh mint. Frozen petit pois are perfect here, making an incredibly rich and creamy drink, and there’s no need to defrost them first.
3 handfuls of frozen petit pois
2 handfuls of mint leaves
2 handfuls of kale, stalks discarded, leaves shredded
300 ml/1¼ cups coconut water (see page 54)
½ teaspoon virgin coconut oil
½-1 teaspoon chlorella powder (see page 15)
SERVES 2
Put the petit pois, mint, kale, coconut water, coconut oil and chlorella in a blender and blend until smooth. Add extra coconut water if too thick.
