1. Preheat oven to 325°F. Line a 15×10×1-inch baking pan with parchment paper. In a bowl stir together all ingredients; mix well. Pat mixture to ¼-inch thickness on the baking pan.

2. Bake 13 to 15 minutes or until golden brown. Transfer parchment with mixture to a wire rack and let cool completely. Break into ½- to 1-inch pieces.

Lemony Butter Bean Lettuce Wraps

  • 1 lemon
  • 1 Tbsp. olive oil
  • 1 Tbsp. snipped fresh mint
  • ¼ tsp. salt
  • ¼ tsp. black pepper
  • 1 15-oz. can no-salt-added butter beans, rinsed and drained
  • 1 Tbsp. finely chopped shallot
  • 4 Bibb or butterhead lettuce leaves

1. Remove 1 tsp. zest and squeeze 2 Tbsp. juice from lemon. In a bowl whisk together zest, juice, olive oil, mint, salt, and pepper. Add beans and shallot; stir to coat. Spoon bean mixture into lettuce leaves.
