The pickled salad and yogurt sauce amplify the taste experience. You won’t even miss the bun!
⅓ cup red wine vinegar
¼ cup half-moon slices red onion
½ cup Roma (plum) tomatoes, cut into 6 wedges each
1 teaspoon chopped fresh oregano
1½ pounds ground turkey
1 large egg, beaten
¼ cup crumbled low-fat feta cheese
1½ tablespoons olive oil
¼ cup chopped dry-packed sun-dried tomatoes
½ teaspoon dried oregano or Mediterranean Spice Blend (here)
½ teaspoon ground black pepper
½ cup nonfat Greek yogurt
½ teaspoon finely chopped fresh dill
⅛ teaspoon finely chopped fresh mint
2 tablespoons finely diced cucumber
Preheat the broiler.
Make the salad: In a small bowl, combine the vinegar, onion, tomatoes, and oregano. Set aside for 30 minutes.
Make the turkey burger: In a medium bowl, combine the ground turkey, egg, feta, olive oil, sun-dried tomatoes, oregano, and black pepper. Form into 4-to 5-ounce patties and place on a baking sheet. Broil for 5 to 7 minutes on each side.
Turn the oven temperature to 350ºF and bake for an additional 10 minutes to ensure doneness.
Make the yogurt sauce: In a small bowl, combine the yogurt, dill, mint, and cucumber. Stir.
Plate the burgers and divide the salad among them. Top each with a dollop of the yogurt sauce.
