You can pep up square meals with very little effort. A salad can add some color and lots of flavor and can be anything but bland. Why shouldn’t everything on your plate be exceptional? In case you are not familiar with this vegetable, I will introduce you to a new treat. Broccolini looks like baby broccoli or broccoli rabe. It has smaller florets than broccoli and longer, thinner stems. It is sweeter and nuttier than broccoli rabe and broccoli. If you cannot find Broccolini, then broccoli will work just fine in this recipe. I’ve selected a Moroccan flavor profile with my Moroccan Spice Blend for this dish. You should experiment with other blends. In fact, this is a good basic recipe for broiling all types of vegetables, and you can use just about any of the spice blends to change up this simple side dish. It’s a good way to put crunch into your meals and snacks.
4 cups Broccolini, hard ends removed
1 tablespoon olive oil
1½ tablespoons fresh lemon juice
⅛ teaspoon sea salt
2 teaspoons Moroccan Spice Blend (here)
Preheat the broiler. Line a baking sheet with parchment paper.
In a large bowl, combine the Broccolini, olive oil, lemon juice, salt, and Moroccan Spice Blend. Stir well to combine.
Spread the spiced Broccolini on the lined baking sheet and broil for 10 minutes, turning two or three times, until the Broccolini florets are crispy and slightly charred.
