SERVES 4
½ pound bacon
1 pound all-natural grass-fed ground beef
Sea salt and freshly ground black pepper
6 ounces fresh spinach
1 Roasted Butternut Squash (see here)
Heat a large sauté pan over medium heat, add the bacon, and cook, flipping a couple of times, until done the way you like it. Remove the bacon from the pan and set aside to cool; pour off the rendered bacon fat into a mason jar or heatproof container, leaving a coating of fat in the pan. Place the pan back over medium heat and add the ground beef; cook until there is no more pink and season with salt and pepper. While the beef cooks, crumble the bacon. Set the beef aside in a small bowl. Without cleaning the pan, add the spinach and cook, stirring, until fully wilted. Add the crumbled bacon, beef, and butternut squash to the pan and stir to combine. Serve yourself and guests, or just plate up your portion and have leftovers for easy reheating later in the week!
