CARROT JUICE COCKTAIL

SERVES 1

WE SERVE this as an amuse-bouche/cocktail at Gramercy Tavern. The sweetness from the orange juice and the tartness from the carrots and vinegar really wake up your palate. If you have a juicer, make the carrot juice yourself; if not, just buy it.

½ cup carrot juice

¼ cup Simple Syrup (here)

1 tablespoon orange juice

1 teaspoon rice wine vinegar

1 teaspoon egg white

Salt

Combine the carrot juice, simple syrup, orange juice, vinegar, egg white, and a pinch of salt in a cocktail shaker and shake vigorously for about a minute. Pour the liquid into a tall glass, top with the foam, and serve right away.
