It’s so easy to notice the sudden change in light that happens during the fall and winter months in the early morning hours. Darkness sticks around a bit longer, days grow shorter, and we all want a little warm sunshine to kiss our cheeks. Alas, our sunshiney hours are drastically reduced, condensed into a few golden moments that, depending on what time you leave for work, can leave you eating breakfast in the dark. Well, if we can’t have that big ol’ fireball in the sky greeting us when we hop (or crawl) out of bed, we can certainly try for it in our bowls and on our plates at that time.
Pumpkin’s ability to merge into either sweet or savory dishes makes it a star breakfast candidate. Full of both healthy starts and heartier beginnings, this chapter is dedicated to those of us (including me) who absolutely require something of substance before noon. And, of course, the breakfast for dinner club, which I’m a proud member of, has not been forgotten, with dishes like shakshuka to spice up even the coldest evening.
