SUPER-SEED PUMPKIN SPICE AND APPLE MUESLI

A year-round favorite of mine, make-ahead muesli is packed with nutritious goodies, and this one gets a super-booster from a stellar seed mix. Pumpkin, hemp, and chia seeds provide protein, iron, fiber, and healthy fats for the ultimate morning power meal. This keeps for 1 week in the refrigerator.

Serves 6

2 cups large-flake rolled oats (not instant)

½ cup raw, unsalted green pumpkin seeds

¼ cup hulled hemp seeds (hemp hearts)

1 tablespoon chia seeds

½ teaspoon pumpkin spice (see page 247)

½ teaspoon salt

1 cup buttermilk or kefir

1 cup water

1–2 tablespoons maple syrup (use full amount for a sweeter muesli)

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 apple, any variety, grated

pomegranate arils or fresh berries, for serving

In a large bowl, combine oats, pumpkin seeds, hemp seeds, chia seeds, pumpkin spice, and salt. In a medium bowl, combine buttermilk or kefir, water, maple syrup, lemon juice, and vanilla; stir into oat mixture, followed by apple. Cover and refrigerate for at least 4 hours, preferably overnight. Stir and serve with pomegranate or berries on top.
