2 cups all-purpose flour
2 teaspoons baking powder
¾ teaspoon kosher salt
⅓ cup sugar
2 large eggs, separated
2 cups milk
½ cup vegetable oil
1 teaspoon pure vanilla extract
Strawberry Butter, for serving

1. Spray a waffle iron with cooking spray and preheat it to medium-high.
2. Sift the flour, baking powder, salt, and sugar into a medium bowl.
3. In a large bowl, with an electric mixer, beat the egg whites until stiff peaks form, about 2 minutes.
4. In another large bowl, stir together the egg yolks, milk, oil, and vanilla. Add the flour mixture and mix just until fully incorporated. Gently fold in the beaten egg whites.
5. For each waffle, spoon ½ cup batter onto the waffle iron and cook until the waffle is golden and releases easily, 5 to 7 minutes. Serve hot with strawberry butter and syrup.
