Barbados is a small island, and there seems to be a church on every corner. What is even more astonishing is that there seems to be at least one rum shop for every church! Specialists in the art of hospitality since the seventeenth century, Barbadians know how to be welcoming. While the women go to church, the men often adjourn to the small shacks where the members of the “bar association” convene to fire off a few Corn and Oils. Barbadians like their drinks sweet; I cut some of the sweetness with a twist of lime.

2 ounces Barbadian-style or other white rum, such as Mount Gay
1½ teaspoons Falernum (page 41)
Ice cubes
Mix together the rum and Falernum in a cocktail shaker. Pour over ice in a highball glass. Serve immediately.
