Bison/buffalo meat has a sweeter and richer flavor than beef. As with all grass-fed meats, bison/buffalo is abundant in fatty acids, vitamin B12, and iron. When combined with tangy salsa, the result is a burger that will definitely satisfy your hunger. This burger makes an excellent protein source when you are creating your personal meal plan.

Calories per serving: 337
1 pound ground bison
⅓ cup sugar-free mild salsa
Heat a grill to low-medium heat or a grill pan over medium heat.
In a medium bowl, combine the bison and salsa; mix thoroughly with clean hands. Form the mixture into 4 patties (about 4 ounces each). Grill to your preference, about 4 minutes on each side for medium doneness. Be careful not to char the meat, as that makes it very toxic.
Variation
With a few tweaks, this recipe also makes a great meat loaf: Preheat the oven to 350°F. In a large bowl, combine 2 pounds ground bison, beef, turkey, or other grass-fed meat with ½ to ¾ cup sugar-free mild salsa. Bake for 40 minutes to 1 hour, or until the internal temperature is 160°F.
