CHOCOLATE VERY CHERRY ICE CREAM
PREP: 10 MINUTES | MAKES: 4 SERVINGS
3 overripe bananas, peeled, cut into 1-inch pieces, and frozen
¼ cup full-fat unsweetened coconut milk
Pinch of sea salt
¼ cup fresh Bing cherries, pitted and halved, chilled
¼ cup chopped stevia-sweetened dark chocolate bar (such as Lily’s brand), chilled
1.Combine the frozen bananas, coconut milk, and salt in a food processor and process until the smooth, creamy consistency of soft serve ice cream is achieved. Stir in the cherries and chocolate and serve immediately, or place in a freezer-safe container and freeze until serving.
Quick Tip: Blend 3 frozen bananas with ¼ cup of coconut milk and use as the base for any combination of ice cream flavors. You can also blend in a few fresh berries or chopped tropical fruit in place of the cherries.
