ALL-SPICED-UP ROASTED CHICKPEAS

2 (15-ounce) cans chickpeas, drained, rinsed, and patted dry
1 tablespoon olive oil
½ teaspoon sea salt
½ teaspoon garlic powder
½ teaspoon sweet paprika
½ teaspoon black pepper
Pinch of ground cayenne pepper
1.Preheat the oven to 400 degrees F and position a rack in the center of the oven.
2.Spread the chickpeas over a rimmed baking sheet. Roast for 5 minutes, until any excess water dries.
3.Remove the pan from the oven and drizzle the chickpeas with the olive oil and salt. Return to the oven for 20 to 30 minutes, or until crunchy, shaking the pan every 10 minutes. Turn the oven off and leave in the oven for 15 minutes.
4.Remove the pan from the oven and sprinkle the chickpeas with the garlic, paprika, black pepper, and cayenne. Toss to coat.
Quick Tip: If you have fresh herbs on hand, chop some up and throw them into your pan of roasting chickpeas for an added burst of flavor.
