BLACKBERRY CHIA SEED PUDDING

PREP: 5 MINUTES | CHILL: OVERNIGHT | MAKES: 4 SERVINGS

1 (13.66-ounce) can full-fat unsweetened coconut milk

2 tablespoons granular erythritol

1 teaspoon vanilla extract

½ cup frozen or fresh blackberries

¼ cup chia seeds

Dollop of full-fat Greek yogurt and strawberries, for garnish (optional)

1.In a food processor, combine the coconut milk, granular erythritol, and vanilla. Blend until smooth.

2.Add the blackberries and process until bright purple and fully incorporated. Fold in the chia seeds.

3.Divide the mixture between four cups and chill overnight, or for up to 3 days, before serving. If desired, garnish with strawberries and yogurt.
