3 tablespoons coconut oil, plus more for greasing
1 tablespoon honey
1 tablespoon vanilla extract
½ teaspoon almond extract
1 cup unsweetened flaked coconut
1 cup walnuts, chopped
1 cup pecans, chopped
½ cup sprouted pumpkin seeds
½ cup macadamia nuts, chopped
¼ cup unsweetened cocoa powder
2 tablespoons flaxseed meal
2 tablespoons ground chia seeds (optional)
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
Sea salt, to taste
1.Preheat the oven to 300 degrees F. Lightly grease a baking sheet with coconut oil.
2.In a small saucepan over low heat, melt the coconut oil and honey together, about 1 minute. Remove from the heat. Mix in the vanilla and almond extracts.
3.In a large bowl, combine all the remaining ingredients. Mix in the coconut oil mixture until the ingredients are evenly coated.
4.Spread the granola over the prepared pan. Bake for 10 minutes, stir, and then bake for about 10 minutes more, until golden brown.
Quick Tip: This granola is so tasty that it’s easy to end up eating more of it than you intend. To stick with your perfect portion, use a ¼-cup scoop to divide the granola into individual ziplock bags right after it cools. Grab a single portion for your bedtime snack! It tastes great with sliced bananas too.
