ORANGE SPICED GRANOLA

3 tablespoons coconut oil, plus more for greasing

1 teaspoon raw honey

¼ cup fruit-only orange marmalade

2 tablespoons freshly squeezed orange juice

1 tablespoon vanilla extract

¼ teaspoon almond extract

2 cups unsweetened flaked coconut

2 cups sliced almonds

1 cup pecans, roughly chopped

2 tablespoons flaxseed meal

1 teaspoon ground cinnamon

½ teaspoon ground ginger

1 orange, zested

Pinch of sea salt

½ cup dried cranberries (no added sugar) or crimson raisins

1.Preheat the oven to 300 degrees F. Lightly grease baking sheet with coconut oil.

2.In a small saucepan over low heat, melt the coconut oil, honey, and marmalade together, about 1 minute. Remove from the heat. Mix in the orange juice and vanilla and almond extracts.

3.In a large bowl, combine all the remaining ingredients. Mix in the coconut oil mixture until the ingredients are evenly coated.

4.Spread the granola over the prepared pan. Bake for 20 minutes, stir, and bake for about 20 minutes more, until golden brown.
