GINGERBREAD-SPICED WAFFLES

1 cup blanched almond flour

1 tablespoon coconut flour

1 teaspoon baking soda

½ teaspoon ground ginger

½ teaspoon ground cinnamon

¼ teaspoon ground cloves

Pinch of sea salt

4 eggs

½ cup full-fat unsweetened coconut milk

2 tablespoons molasses

1 teaspoon vanilla extract

¼ teaspoon liquid stevia

Coconut oil for greasing

1.Preheat a waffle maker.

2.In a medium bowl, combine the almond flour, coconut flour, baking soda, ginger, cinnamon, cloves, and salt.

3.In another medium bowl, beat the eggs. Mix in the coconut milk, molasses, vanilla, and stevia. Add the egg mixture all at once to the flour mixture. Stir just until moistened.

4.Use a paper towel to carefully rub coconut oil on your preheated waffle maker. Cook the batter according to the manufacturer’s directions.

Quick Tip: Feel free to whip this batter into pancakes instead of waffles if that’s more your style. They taste phenomenal either way. I like to top these with raspberries and a little maple syrup.
